It’s no secret that we love buffalo sauce here at ( slamon.rest ) . We’re pretty much always down for some buffalo wings, but when they’re on a game day, they don’t always fit into our daily meal plan. Instead we’ve taken the combination of buttery, spicy flavors and added it to our favorite breakfast, lunch and dinner favorites, like our Buffalo Hash Browns, our Buffalo Chicken Crunch Wraps, our Buffalo Deep Stuffed Chicken, or our Buffalo Chicken . We love buffalo sauce so we’re expanding it beyond chicken wings, like in this buffalo shrimp lettuce wrap. They are a meal prep dream that comes together in less than an hour for an easy, super tasty, low carb lunch or snack.

Sometimes lettuce wraps can be a little… lazy. These are not! We keep it simple, taking inspiration from buffalo wing staples—like blue cheese dressing and crunchy carrot and celery sticks—and replacing them with shredded celery and fresh crumbled blue cheese. If you’re a ranch dressing fan, go ahead and add a little drizzle on top—we’re totally in favor, especially if you’re not a big fan of the spice. Another way to tone down the heat is to add some butter to your hot sauce, a la our Buffalo Cauliflower Wings recipe. That being said, you can definitely keep these vegetarian by swapping out your favorite meatless options for shrimp, like our buffalo cauliflower bites or tempeh “wings.”

Ingredients

4 tbsp. butter

2 garlic cloves, minced

1/4 c. hot sauce, such as Frank’s

1 tbsp. extra-virgin olive oil

1 lb. shrimp, peeled and deveined, tails removed

Kosher salt

Freshly ground black pepper

1 head romaine, leaves separated, for serving

1/4 red onion, finely chopped

1 rib celery, sliced thin

1/2 c. blue cheese, crumbled

Directions

Step 1

Make the buffalo sauce: Melt the butter in a small saucepan over medium heat. When completely melted, add garlic and cook until fragrant, 1 minute. Add hot sauce and stir to combine. Lower the heat while you cook the shrimp.

Step 2

Prepare the prawns: Heat oil in a large wok over medium heat. Add shrimp and season with salt and pepper. Cook, flipping halfway through, until pink and opaque on both sides, about 2 minutes per side. Turn off the heat and add the buffalo sauce, tossing to coat.

Step 3

Assemble the wraps: Add a small scoop of shrimp to the center of the romaine leaves, then top with red onion, celery and blue cheese.
